Ancestral Mexican Culinary experiences for grades K-6 designed to preserve and pass down cultural traditions, while building empathy and fostering community.

Proyecto CAL aspires to pass down and preserve cultural traditions native to Mexico, with the intention of fostering an environment of curiosity, leadership, and cross-cultural understanding. We hope to join classes and be a mirror for Latino students who get to experience pride in their heritage, and also be a window for non-Latinx students who will be able to find inspiration and share community in a private culinary experience with a culinary team member of Amano, a 4x James Beard nominee. 

What does proyecto CAL mean?

Cal, or limestone, is an essential ingredient in the nixtamalization process of masa. Ironically, the first letter of the three concepts under Salvador and Rebecca Alamilla, CÁN, AMANO, and Los Hoyos, come together to spell C-A-L. Just as cal is essential to tortillas, we believe that cultural traditions are foundational to identity. With the Mexican diaspora leading so many mexicanos to living in the United States, it’s more important than ever to connect to culinary traditions to preserve them and pass them down to the next generation.

What activities do students participate in?

Proyecto CAL teaches students about corn and it’s foundation in Mexican cuisine! Together, we make corn tortillas pressed by hand, and make a salsa de molcajete using a mortar and pestle. At the end of the activity, we enjoy the meal we have created together.
